Payasam
I noticed last year in India that now Payasam is available like coffee is during onam days.
Some restaurants just sell payasam in a glass..
You can buy Payasam without the feast.
Like if you are walking down the street you can just walk in to a restaurant buy a glass of Payasam and drink it and go on your way.
I thought that was kind of nice.
But I could not try it last year in Kerala.
The payasams of Kerala.
One very common Payasam is parippu Payasam.
Payasam is of two kinds.
Sarkkara and Paal.
Sarkkara is brown Payasam.
Paal is white Payasam.
Parippu Payasam is brown in color and has thenga kottu and cashews floating on it.
My father likes this a lot.
A kind of Paal Payasam I like a lot is Semiya Payasam.
My mother makes it with condensed milk.
It is yummy hot and cold after putting in refrigerator.
When I was a young child someone brought this thick Payasam in brown color.
It is a most amazing Payasam.
I think it is neyy Payasam.
It is made of rice jaggery and ghee.
Another famous Payasam is ambalapuzha Paal Payasam.
It is available only in ambalapuzha.
Another kind of Payasam is adapradhaman.
For this ada has to be made first.
Pradhaman means prime.
This is also a kind of Paal Payasam.
My parents did not make it.
These are the major kinds of Payasam.
In latest food blogs I have seen caramel Payasam oats Payasam etc.
